Boursin Cheese Stuffed Mushrooms

Serves 8 to 10

I devised this quick and easy recipe when asked to bring a hot appetizer to a party. I just happened to have all these ingredients in my refrigerator and thought they would go well together. Everyone agreed I was right!

Elegant stuffed mushrooms that transform simple ingredients into irresistible appetizers. These savory bites are so delicious that even those who typically avoid mushrooms find themselves coming back for more!

Ingredients

  • 24-30 white mushrooms (1 to 1½ inches in diameter)
  • 1 shallot, finely chopped
  • 1 tablespoon butter
  • 1 package Boursin cheese
  • ¼ cup dried bread crumbs
  • 1 egg, beaten
  • 2 TBS olive oil or olive oil spray

Instructions

    1. Preheat oven to 350°F
    2. Prepare mushrooms:
      – Clean mushrooms
      – Remove stems
      – Finely chop stems
    3. Make filling:
      – Melt butter in small frying pan
      – Add chopped stems and shallot
      – Sauté 3-4 minutes until soft
      – Remove from heat
    4. Create cheese mixture:
      – Add Boursin cheese
      – Add bread crumbs
      – Add beaten egg
      – Blend well
    5. Assemble:
      – Brush or spray the top of each mushroom with olive oil
      – Fill each mushroom cap with mixture
      – Place on a jelly roll pan lined with parchment paper
    6. Bake 15 minutes
    7. Serve warm

    Chef’s Notes

    • Using a spray oil container with olive oil or an aerosol can of olive oil saves time
    • Can be assembled up to a day ahead and refrigerate until ready to heat and serve
    • Perfect for parties and gatherings
    • Can be prepared in advance and baked just before serving
