This recipe started as a standard artichoke dip but evolved when I added green chilies for an extra kick. Now it’s my signature party dish that friends specifically request.

A warm, creamy dip combining tender artichokes with mild green chilies and Parmesan cheese. Perfect for entertaining, this crowd-pleasing appetizer offers a delightful balance of rich and zesty flavors.
Ingredients
For the Dip
- 1 (15 oz.) can artichoke hearts
- 1 (4 oz.) can diced green chilies
- 2 scallions, finely chopped
- 2 cloves garlic, finely diced
- 1 cup mayonnaise
- 1¼ cups grated Parmesan cheese, divided
For Serving
- 1 baguette, cut into ½-inch slices
- Assorted crackers
Instructions
- Prepare oven:
– Preheat to 400°F - Prepare artichokes:
– Drain artichoke hearts
– Chop finely - Mix ingredients:
– Combine artichokes, chilies, scallions, garlic
– Add mayonnaise
– Mix in 1 cup Parmesan
– Season with salt and pepper - Assemble:
– Spray 1-quart casserole with cooking spray
– Spread mixture evenly
– Top with remaining ¼ cup Parmesan - Bake:
– 18-20 minutes
– Until lightly browned and bubbling - Serve hot with bread or crackers
