Mashed Cauliflower

We are trying to eat healthy food, so we have mostly cut out white potatoes from our diet. Being potato lovers, we think these taste almost as good as mashed potatoes.

Description

A creamy, delicious alternative to mashed potatoes that’s both healthy and satisfying. This clever cauliflower mash is so authentic that most people can’t tell the difference from traditional potato mash!

Ingredients

  • 1 head cauliflower, broken into florets
  • 2 cloves garlic, diced
  • 2 cups chicken broth
  • ½ cup goat yogurt (or plain yogurt of choice)
  • 1 tablespoon European butter (or high-quality butter)
  • ½ cup grated parmesan cheese
  • 2 tablespoons diced chives (optional)
  • Salt & pepper to taste

Instructions

  1. Place cauliflower florets and diced garlic in a medium-sized saucepan
  2. Pour chicken broth over the vegetables and cook until fork tender, approximately 8 minutes
  3. Drain thoroughly
  4. Add yogurt, butter, and parmesan cheese
  5. Use a potato masher to combine ingredients
  6. Blend with a handheld emulsifier until smooth
  7. Stir in chives, salt, and pepper

Chef’s Notes

  • Best if made ahead and reheated before serving because while cooking, cauliflower may release a strong aroma – don’t worry, this won’t affect the final taste!
  • Perfect for low-carb diets or anyone looking to incorporate more vegetables into their meals
  • Best served hot
